    Chill the Glasses

    Place the two glasses in the freezer or fill them with ice water to chill while preparing the drink.

    Set Up the Absinthe Fountain

    Fill the absinthe fountain with cold water and ensure the spouts are positioned directly above each glass.

Mixing

    Combine the Ingredients

    In a mixing glass, pour 4 oz of Pineau des Charentes and 2 oz of Lavender Absinthe.

    Stir the Mixture

    Gently stir the mixture with a bar spoon for about 15-20 seconds to combine the flavors.

Serving

    Strain Into Chilled Glasses

    Remove the chilled glasses from the freezer or discard the ice water. Strain the mixture evenly into the two glasses.

    Add the Sugar Cubes

    Place one almond sugar cube on each absinthe spoon and position it over the glass.

    Dilute with Water

    Slowly turn on the spout of the absinthe fountain to let cold water drip over the sugar cubes, allowing them to dissolve into the drink. Aim for about 1-2 oz of water per glass, adjusting to taste.

    Once the sugar is dissolved, stir gently and serve immediately, garnished with a sprig of lavender if desired.
