Method
Molasses Brine

Prepare the Brine
In a large bowl, combine water, molasses, and salt. Stir until salt is fully dissolved.

Add Spices
Add black peppercorns, garlic cloves, and bay leaves to the brine mixture.

Brine the Pork
Place the pork chop into the brine, ensuring it is fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Sear the Pork Chop
Remove the pork chop from the brine, rinse under cold water, and pat dry with paper towels. Season both sides with salt and black pepper.

Cook the Pork Chop
Sear the pork chop for about 4-5 minutes on each side, or until it reaches an internal temperature of 145°F (63°C). Remove from skillet and let rest for 5 minutes before serving.

Sprinkle sea salt over the peppers and toss to combine. Remove from heat.
Panisse Tomatillo Salsa

Taste and Adjust
Taste the salsa and adjust seasoning if necessary, adding more lime juice or salt to taste.
Epazote Chimichurri Peach Mostarda

Combine Ingredients
In a bowl, mix together peach preserves, fresh epazote, red wine vinegar, olive oil, and mustard seeds.

Stir until all ingredients are well combined. Let sit for at least 15 minutes to allow flavors to meld.
