White Chocolate Ganache Preparation

Melt the Chocolate
In a medium saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the white chocolate chips. Let sit for 2-3 minutes to allow the chocolate to melt.

Stir Until Smooth
Whisk the mixture until the chocolate is fully melted and the ganache is smooth and glossy. Allow it to cool slightly before using.

Prep the Strawberries
Wash the fresh strawberries and remove the stems. Slice them into halves or quarters depending on your preference.

Mix with Sugar and Lemon Juice
In a bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently and let sit for about 10 minutes to macerate.

Layer the Ingredients
In a 1/2 pint jar or glass, start with a layer of crushed graham crackers (about 1/4 cup). Follow with a layer of the macerated strawberries (about 1/4 cup), then pour a layer of white chocolate ganache (about 1/4 cup). Repeat the layers until the jar is filled, finishing with the ganache on top.

Garnish
Top the ganache with a few mint leaves for garnish. Cover and refrigerate for at least 30 minutes before serving to let the flavors meld.
