Method

Preparation

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.

  2. 2

    Chop Vegetables

While the pasta is cooking, chop the bell peppers, zucchini, carrot, and halve the cherry tomatoes. Prepare the broccoli florets by cutting them into bite-sized pieces.

Cooking

  1. 3

    Sauté Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

  2. 4

    Add Vegetables

Add the chopped bell peppers, zucchini, broccoli, and carrot to the skillet. Sauté for about 5-7 minutes until they are tender but still crisp. Add the cherry tomatoes and cook for an additional 2-3 minutes.

  3. 5

    Combine Pasta and Sauce

Pour the vegetable broth into the skillet and bring to a simmer. Add the cooked pasta to the skillet, tossing everything together. Stir in the grated Parmesan cheese and basil, mixing until the cheese is melted and everything is well combined.

  4. 6

    Season

Season with salt and black pepper to taste. Stir well and remove from heat.

Serving

  1. 7

    Plate the Dish

Serve the Vegetable Pasta Primavera warm, garnished with additional Parmesan cheese and fresh basil if desired.
