Preparation of Strawberries

Wash and Slice
Begin by washing the fresh strawberries thoroughly under cold running water. Remove the green tops and slice the strawberries into halves or quarters, depending on your preference.
Making the Strawberry Glaze

Combine Ingredients
In a medium saucepan, combine the granulated sugar and water. Stir well and bring the mixture to a boil over medium heat.

Thicken the Glaze
In a small bowl, mix the cornstarch with a few tablespoons of cold water until smooth. Once the sugar-water mixture is boiling, add the cornstarch mixture while stirring continuously. This will help thicken the glaze.

Add Flavor
Once the glaze has thickened to a syrupy consistency, remove it from heat and stir in the lemon juice and vanilla extract, mixing well.
Combining Strawberries and Glaze

Mix and Chill
In a large mixing bowl, gently fold the sliced strawberries into the warm strawberry glaze until they are well coated. Allow the mixture to cool for a few minutes, then refrigerate for at least 30 minutes to let the flavors meld.
