Method

Preparation

  1. 1

Wash the baby spinach and butter lettuce under cold water. Pat them dry with a clean towel or use a salad spinner to remove excess moisture.

  2. 2

Chop the mushrooms into thin slices and set aside.

  3. 3

Core the apple and slice it into thin wedges or cubes, depending on your preference.

  4. 4

Roughly chop the walnuts into smaller pieces if desired.

Assembling the Salad

  1. 5

In a large mixing bowl, combine the washed baby spinach and butter lettuce.

  2. 6

Add the sliced mushrooms, apple pieces, and chopped walnuts to the bowl.

  3. 7

Crumble the goat cheese over the top of the salad ingredients.

Making the Dressing

  1. 8

    Chipotle Jelly Vinaigrette

In a small bowl, whisk together the chipotle jelly, olive oil, apple cider vinegar, salt, and black pepper until well combined.

Serving

  1. 9

Drizzle the dressing over the assembled salad and toss gently to combine, making sure all ingredients are coated.

  2. 10

Serve immediately as a refreshing side dish or light main course.
