Preheat Oven
Preheat your oven to 400°F (200°C).

Prepare Flatbread
Brush each piece of flatbread with olive oil on both sides and place them on a baking sheet.
Assembling Flatbread

Layer Ingredients
Evenly spread the roasted corn, black beans, diced red bell pepper, and chopped spinach over the flatbread.

Add Cheese
Sprinkle shredded Colby Jack cheese generously over the top of the layered ingredients.

Drizzle Dressing
Drizzle the Southwest ranch dressing over the top of the cheese and vegetables.

Add Cilantro
Finish by sprinkling chopped cilantro over the entire flatbread.
Cooking

Bake Flatbread
Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.

Cool and Serve
Remove from the oven, let cool for a couple of minutes, then slice into quarters and serve warm.
