    In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly. Cook the mixture, stirring frequently, until it turns a rich brown color, resembling chocolate (about 15-20 minutes). Be careful not to burn it.

    Once the roux is ready, add the chopped onion, green bell pepper, celery, and garlic to the pot. Sauté the mixture for about 5-7 minutes, or until the vegetables are soft and fragrant.
