    Prepare the Shrimp

    In a medium bowl, combine the cajun seasoning, salt, and black pepper. In another bowl, whisk together the buttermilk and beaten egg. In a third bowl, mix the flour and cornmeal.

    Coat the Shrimp

    Dip each shrimp into the buttermilk mixture, allowing the excess to drip off, then coat in the flour-cornmeal mixture. Set aside on a plate.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

    Fry the Shrimp

    Carefully add the coated shrimp to the hot oil in batches, frying for 2-3 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.
