Prepare the Shrimp
In a medium bowl, combine the cajun seasoning, salt, and black pepper. In another bowl, whisk together the buttermilk and beaten egg. In a third bowl, mix the flour and cornmeal.

Coat the Shrimp
Dip each shrimp into the buttermilk mixture, allowing the excess to drip off, then coat in the flour-cornmeal mixture. Set aside on a plate.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

Fry the Shrimp
Carefully add the coated shrimp to the hot oil in batches, frying for 2-3 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Slice the French bread or hoagie rolls in half lengthwise.

On the bottom half of each roll, layer the shredded lettuce, followed by the sliced tomatoes, fried shrimp, pickles, and a generous drizzle of remoulade sauce.
