Method

Marinating the Shrimp

  1. 1

    Prepare the Marinade

In a mixing bowl, combine soy sauce, lemon juice, minced garlic, grated ginger, and sesame oil. Whisk until well combined.

  2. 2

    Marinate the Shrimp

Add the peeled and deveined shrimp to the marinade. Stir to coat all the shrimp evenly. Cover the bowl and marinate in the refrigerator for at least 30 minutes.

Cooking

  1. 3

    Prepare the Vegetables

While the shrimp is marinating, prepare the vegetables. Slice the bell pepper and zucchini into thin strips and chop the green onions.

  2. 4

    Sauté the Vegetables

In a large skillet over medium heat, add a splash of oil. Once hot, add the sliced bell pepper and zucchini. Sauté for about 5-7 minutes until they are tender but still crisp. Stir occasionally.

  3. 5

    Cook the Shrimp

Remove the marinated shrimp from the refrigerator and add them to the skillet with the sautéed vegetables. Cook for 3-5 minutes or until the shrimp are pink and opaque, stirring occasionally.

Final Touches

  1. 6

    Prepare the Eggs

In a separate pan, lightly scramble the duck eggs over low heat until just set. Season with salt and pepper to taste.

  2. 7

    Combine and Serve

Once the shrimp and vegetables are cooked, serve them on a plate topped with the scrambled duck eggs. Garnish with chopped cilantro and lime wedges on the side.
