    Prepare the Grits

    In a large pot, bring 6 cups of water to a boil and add 1 tsp of salt.

    Cook the Grits

    Slowly whisk in the 2 cups of stone-ground grits. Reduce the heat to low, cover, and cook for about 20-25 minutes, stirring occasionally, until thickened.

    Add Cheese and Cream

    Once the grits are cooked, stir in 4 tbs of butter, 2 cups of shredded cheddar cheese, and 1 cup of cream until fully melted and combined. Keep warm.

Shrimp

    Sauté the Shrimp

    In a large skillet, heat 2 tbs of olive oil over medium-high heat. Add 4 minced garlic cloves and sauté until fragrant, about 30 seconds.

    Cook the Shrimp

    Add 1.5 lbs of peeled and deveined shrimp to the skillet. Sprinkle with 1 tsp paprika, 1 tsp cayenne pepper, and salt and pepper to taste. Cook for about 3-4 minutes, or until shrimp are pink and cooked through.

    Finish with Lemon Juice

    Remove from heat and stir in 2 tbs of lemon juice. Ensure shrimp are well-coated.

Assembly

    Serve

    Spoon the creamy cheese grits into bowls, top with the sautéed shrimp, and garnish with sliced green onions and chopped parsley.
