Prep the Potatoes
Wash and scrub the red potatoes thoroughly to remove any dirt. Cut them into quarters or halves, depending on their size. Place them in a large bowl.

Chop the Vegetables
Mince the garlic cloves and add them to the bowl with the potatoes. Chop the green onions (both white and green parts) and add them to the bowl. Dice the red bell pepper and finely chop the jalapeño pepper (remove seeds for less heat) before adding to the bowl.

Mix the Ingredients
In the bowl with the potatoes and vegetables, add the olive oil, paprika, cayenne pepper, salt, and black pepper. Toss everything together until the potatoes are well coated with the oil and spices.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Roast the Potatoes
Spread the seasoned potatoes and vegetables onto a large baking sheet in a single layer. Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and tender, stirring halfway through.
Serving

Once the potatoes are done roasting, remove them from the oven and sprinkle with fresh parsley. Serve hot as a side dish or enjoy as a snack.
