    Soak the Beans

    Rinse the red beans under cold water and soak them in a pot with enough water to cover them for at least 8 hours or overnight.

    Cook the Beans

    After soaking, drain the beans and transfer them to a pot. Add 3 cups of fresh water and bring to a boil. Reduce heat and let simmer for about 1 hour, or until the beans are tender.

    Prepare the Vegetables

    Chop the onion, bell pepper, and celery. Mince the garlic and set aside.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery, and sauté until the vegetables are soft, about 5-7 minutes. Add the minced garlic and cook for an additional minute.

    Add Seasonings

    Stir in the Cajun seasoning, bay leaf, salt, and black pepper. Mix well to combine with the sautéed vegetables.

    Combine with Rice and Beans

    Add the cooked red beans along with their cooking liquid and the uncooked rice to the skillet. Pour in 2 cups of water.

    Cook the Rice

    Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked through and has absorbed the liquid.

    Serve

    Remove the bay leaf, fluff the rice and beans with a fork, and serve warm. Enjoy your Red Bean and Rice!
