Prepare the Red Beans
Rinse the red beans under cold water and soak them in a large bowl with enough water to cover them for at least 8 hours or overnight.

Add Garlic and Seasonings
Stir in the minced garlic, Cajun seasoning, salt, and black pepper. Cook for another 1-2 minutes until the garlic is fragrant.

Combine the Ingredients
Add the soaked and drained red beans, canned diced tomatoes (with their juice), and vegetable broth to the pot. Stir well to combine.

Simmer the Mixture
Add the bay leaves and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1 hour, or until the beans are tender.

Cook the Rice
In a separate pot, bring 4 cups of water and a pinch of salt to a boil. Add the long-grain white rice, stir, cover, and reduce the heat to low. Cook for about 18-20 minutes until the rice is tender and the water is absorbed.

Combine Everything
Once the beans are tender, remove the bay leaves from the pot. Adjust seasoning if necessary. Serve the red beans over the cooked rice.

Top each serving with chopped fresh parsley for added flavor and color.
