Method

Preparation

  1. 1

    Prep the Chicken

Pat the chicken breasts dry with a paper towel. Season both sides with salt, black pepper, and thyme.

  2. 2

    Prepare the Mushrooms

Clean the mushrooms with a damp cloth and slice them evenly.

Cooking

  1. 3

    Sear the Chicken

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once the oil is hot, add the seasoned chicken breasts. Cook for about 6-7 minutes on each side until golden brown and fully cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.

  2. 4

    Cook the Mushrooms

In the same skillet, add the remaining tablespoon of olive oil and the butter. Once melted, add the sliced mushrooms and minced garlic. Sauté for about 5-6 minutes until the mushrooms are tender and browned.

  3. 5

    Combine and Finish

Return the seared chicken to the skillet with the mushrooms. Allow to cook together for an additional 2-3 minutes to meld the flavors. Adjust seasoning if necessary.

Serving

  1. 6

    Plate the Dish

Serve the chicken breasts topped with the sautéed mushrooms. Garnish with fresh parsley if using and enjoy!
