Activate Yeast
In a small bowl, mix the warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

In a large mixing bowl, combine the all-purpose flour, salt, and sugar.

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for 1 hour.

Roll Out Dough
Preheat the oven to 375°F (190°C). After the dough has risen, roll it out on a floured surface into a large circle about 1/8 inch thick.

Cut Triangle Shapes
Cut the dough into 8 equal triangular shapes.

Spread a thin layer of Dijon mustard on each triangle. Layer the sliced turkey, Swiss cheese, and fresh spinach on the wide end of each triangle.

Starting from the wide end, carefully roll each triangle towards the point to form a croissant shape. Place them on a baking sheet lined with parchment paper.
