Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Making Cheese Sauce

    Prepare the Roux

    In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 2 minutes, stirring constantly until it turns a light golden color.

    Add Milk

    Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens, about 5-7 minutes.

    Add Cheese

    Reduce the heat to low and gradually stir in the Colby cheese, Parmesan cheese, and smoked Gouda cheese until fully melted and smooth.

    Season the Sauce

    Add salt and black pepper to the cheese sauce, adjusting to taste.

Combining and Serving

    Combine Pasta and Sauce

    Add the cooked elbow macaroni to the cheese sauce and stir until well combined.
