Potatoes

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Prepare the Potatoes

Wash and scrub the russet potatoes thoroughly under cold water. Pat them dry with a towel.

  3. 3

    Season Potatoes

Prick each potato several times with a fork. Rub each potato with olive oil and sprinkle with salt.

Baking

  1. 4

    Bake the Potatoes

Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.

Topping

  1. 5

    Prepare Toppings

While the potatoes are baking, prepare the toppings. Slice the green onions, shred the cheddar cheese, and cook the bacon until crispy, then crumble it.

  2. 6

    Assemble Loaded Potatoes

Once the potatoes are baked, remove them from the oven. Allow them to cool slightly, then cut each potato lengthwise down the center, being careful not to cut all the way through. Gently squeeze the ends to open the potato.

  3. 7

    Add Butter and Seasoning

Add a tablespoon of butter into each potato and season with black pepper. Use a fork to fluff the insides.

  4. 8

    Top the Potatoes

Spoon sour cream, sprinkle shredded cheddar cheese, bacon bits, and sliced green onions generously over each potato.
