Crust Preparation

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Mix Dry Ingredients

    In a medium bowl, whisk together the flour, powdered sugar, and salt.

    Combine with Butter

    In a separate bowl, beat the softened butter and vanilla extract until creamy. Gradually add the dry mixture and mix until crumbly.

    Form the Crust

    Press the mixture firmly into the bottom of a greased 8x8 inch baking dish, ensuring it’s evenly distributed.

    Bake

    Bake in the preheated oven for 15-20 minutes, or until lightly golden. Remove from the oven and let it cool slightly.

Lemon Curd Filling Preparation

    Whisk Ingredients

    In a medium bowl, whisk together the granulated sugar and eggs until well combined. Add lemon juice, lemon zest, and salt, and whisk until smooth.

    Heat Mixture

    In a saucepan over medium heat, melt the butter and then add the mixture from the bowl. Cook, stirring constantly until it thickens, about 10 minutes.

    Pour Filling

    Once thickened, pour the lemon curd filling over the baked crust, spreading it evenly.

    Bake Again

    Return to the oven and bake for an additional 20-25 minutes, or until the filling is set. Remove from the oven and let cool completely.

Raspberry Sauce Preparation

    Combine Ingredients

    In a small saucepan, combine the fresh raspberries, granulated sugar, and water.

    Cook Sauce

    Cook over medium heat, stirring gently until the raspberries break down and the mixture thickens slightly, about 5-7 minutes.

    Strain Sauce

    If desired, strain the sauce through a fine sieve to remove seeds. Let cool.

Serving

    Dust with Powdered Sugar

    Before serving, dust the lemon bars with powdered sugar.
