Method

Crust Preparation

  1. 1

    Make the crust

In a medium bowl, combine the graham cracker crumbs and granulated sugar. Melt the unsalted butter and mix it into the crumb mixture until evenly combined.

  2. 2

    Press the crust

Preheat the oven to 350°F (175°C). Press the crumb mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and set aside to cool.

Cheesecake Filling Preparation

  1. 3

    Prepare the filling

In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy.

  2. 4

    Add sugar and cocoa

Gradually add the granulated sugar and unsweetened cocoa powder, mixing until well incorporated.

  3. 5

    Incorporate eggs and sour cream

Add the vanilla extract, eggs one at a time, and sour cream. Mix until the filling is smooth and fluffy.

  4. 6

    Add heavy cream

Pour in the heavy cream and mix until fully incorporated.

  5. 7

    Bake the cheesecake

Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven at 325°F (160°C) for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

  6. 8

    Cool and refrigerate

Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.

Chocolate Glaze Preparation

  1. 9

    Make the glaze

In a small saucepan, heat the heavy cream over medium heat until it starts to simmer. Remove from heat and add the dark chocolate chips. Let sit for a minute, then whisk until smooth.

  2. 10

    Glaze the cheesecake

Pour the chocolate glaze over the chilled cheesecake, spreading it evenly. Allow the glaze to set for about 30 minutes before serving.

Garnishing

  1. 11

    Final touches

Dust the top of the cheesecake with cocoa powder just before serving for an elegant finish.
