Crust Preparation

Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the crust
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and allow it to cool while preparing the filling.
Cheesecake Filling Preparation

Mix the filling ingredients
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar, sour cream, vanilla extract, cocoa powder, and melted semi-sweet chocolate. Mix until well combined.

Add the eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Pour the filling
Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

Bake the cheesecake
Bake in the oven at 325°F (163°C) for 55-60 minutes or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool slowly.

Chill the cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.

Make the glaze
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped semi-sweet chocolate. Let it sit for 2-3 minutes, then stir until smooth.

Cool the glaze
Allow the glaze to cool slightly before pouring it over the chilled cheesecake.

Once the glaze has set, dust the top of the cheesecake with cocoa powder and add chocolate shavings as desired.

Remove the sides of the springform pan, slice the cheesecake into 14 pieces, and serve chilled.
