    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine chocolate graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated with butter.

    Form the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan, making sure it's even. Bake for 10 minutes, then remove from the oven and let it cool.

Cheesecake Filling

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add in granulated sugar, mixing until combined.

    Add remaining ingredients

    Add sour cream, vanilla extract, cocoa powder, and melted dark chocolate to the cream cheese mixture. Mix until smooth. Add eggs one at a time, beating well after each addition until fully incorporated.

    Bake the cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 55-60 minutes or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

    Remove the cheesecake from the oven, let it cool at room temperature for another hour, then cover and refrigerate for at least 4 hours, preferably overnight.

Chocolate Glaze

    Prepare the glaze

    In a small saucepan over low heat, combine the chopped dark chocolate and heavy cream. Stir continuously until the chocolate is melted and the mixture is smooth.

    Glaze the cheesecake

    Remove the chilled cheesecake from the refrigerator. Pour the chocolate glaze over the top, allowing it to drip down the sides. Use a spatula to spread it evenly if needed.

    Finish the cheesecake

    Dust the top of the cheesecake with cocoa powder before slicing it into 14 equal slices. Serve chilled.
