Method

Crust Preparation

  1. 1

    Prepare the Crust

In a medium mixing bowl, combine the chocolate graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated and resemble wet sand.

  2. 2

    Form the Crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan, making sure it is even. Use the bottom of a measuring cup to help compact it. Preheat your oven to 350°F (175°C).

  3. 3

    Bake the Crust

Bake the crust in the preheated oven for 8-10 minutes, then remove and allow it to cool while preparing the filling.

Cheesecake Filling Preparation

  1. 4

    Mix the Filling

In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the granulated sugar, mixing well until fully combined.

  2. 5

    Add Remaining Ingredients

Add the sour cream, vanilla extract, and cocoa powder into the cream cheese mixture. Blend until smooth. Finally, add the eggs one at a time, mixing just until incorporated after each addition.

  3. 6

    Pour Filling into Crust

Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula. Tap the pan gently on the counter to release any air bubbles.

  4. 7

    Bake the Cheesecake

Bake the cheesecake at 325°F (163°C) for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, letting the cheesecake cool in the oven for 1 hour.

  5. 8

    Chill the Cheesecake

Refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set completely.

Chocolate Ganache Preparation

  1. 9

    Heat the Cream

In a small saucepan, bring the heavy cream to a simmer over medium heat. Do not let it boil.

  2. 10

    Melt the Chocolate

Remove the saucepan from heat and add the chopped dark chocolate. Let it sit for a few minutes, then stir until smooth and fully melted.

  3. 11

    Cool the Ganache

Allow the ganache to cool slightly, then pour it over the chilled cheesecake, spreading evenly with a spatula.

Garnishing

  1. 12

    Garnish the Cheesecake

Once the ganache has set, decorate the cheesecake with chocolate shavings and dollops of whipped cream as desired.
