Grilled Cheese Bites

    Prepare the Bread and Cheese

    Lay out the 8 slices of bread. On 4 slices, add about 1/2 cup of shredded cheddar cheese evenly. Top with the remaining 4 slices of bread to make 4 sandwiches.

    Butter the Sandwiches

    Spread 1 tablespoon of butter on one side of each sandwich.

    Grill the Sandwiches

    Heat a skillet or griddle over medium heat. Place the sandwiches buttered-side down on the skillet. Grill for about 3-4 minutes until golden brown.

    Flip and Continue Cooking

    Carefully flip each sandwich and butter the top side. Grill for another 3-4 minutes until the cheese is melted and both sides are golden brown.

    Cut into Bites

    Remove the sandwiches from the skillet and let them cool slightly. Cut each sandwich into quarters to create bite-sized pieces.

Creamy Tomato Soup

    Sauté the Aromatics

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent (about 5 minutes).

    Add Tomatoes and Broth

    Pour in the canned crushed tomatoes and chicken or vegetable broth. Stir to combine and bring to a simmer.

    Add Cream and Season

    Once simmering, stir in the heavy cream. Season with salt and black pepper to taste. Allow the soup to simmer for an additional 10 minutes.

    Blend the Soup (Optional)

    For a smoother soup, use an immersion blender to blend the mixture until smooth. Otherwise, you can leave it chunky.

    Serve

    Ladle the soup into bowls and garnish with fresh basil if desired. Serve alongside the grilled cheese bites.
