Fried Catfish

Prepare the Catfish
Rinse the catfish fillets under cold water and pat dry with paper towels.

Marinate
Place the catfish fillets in a shallow dish and pour the buttermilk over them. Ensure they are well coated. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare the Coating
In a large bowl, mix together the cornmeal, all-purpose flour, cajun seasoning, salt, and black pepper.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off, and dredge in the cornmeal mixture, pressing lightly to adhere. Carefully place the fillets in the hot oil and fry for about 4-6 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Corn Fritters

Mix Ingredients
In a mixing bowl, combine sweet corn, all-purpose flour, baking powder, egg, salt, and black pepper. Stir until well combined.

Heat Oil for Fritters
In a separate skillet, heat the vegetable oil over medium heat.

Fry the Fritters
Using a spoon, drop small amounts of the corn batter into the hot oil. Fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.
Daring Dipping Sauce

Combine Ingredients
In a small bowl, mix together mayonnaise, ketchup, hot sauce, and lemon juice until smooth and well combined.

Transfer the dipping sauce to a serving bowl.
