Method

Egg Preparation

  1. 1

    Boil the Eggs

Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium heat. Once boiling, cover the pot and remove it from the heat. Let the eggs sit for 12 minutes.

  2. 2

    Cool the Eggs

After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes. This will make peeling easier.

  3. 3

    Peel the Eggs

Once cooled, gently tap each egg on the counter and peel under running water to help remove the shells.

Filling Preparation

  1. 4

    Prepare the Filling

Slice the peeled eggs in half lengthwise and remove the yolks. Place the yolks in a mixing bowl and mash them with a fork.

  2. 5

    Mix the Ingredients

Add mayonnaise, Dijon mustard, chopped dill, finely chopped jalapeños, salt, and black pepper to the mashed yolks. Mix until smooth and creamy.

Assembly

  1. 6

    Fill the Egg Whites

Using a spoon or piping bag, fill the egg white halves with the yolk mixture.

  2. 7

    Top with Shrimp

Place a boiled shrimp on top of each filled egg half. Sprinkle with paprika and garnish with fresh dill.
