Shrimp Po-Boy Preparation

    Prepare the Shrimp

    Peel and devein the shrimp. Rinse under cold water and pat dry with paper towels.

    Coat the Shrimp

    In a bowl, combine cornstarch, salt, and black pepper. Dip each shrimp into the beaten egg, then coat with the cornstarch mixture.

    Fry the Shrimp

    In a large skillet, heat cooking oil over medium-high heat. Once hot, carefully add the shrimp in batches and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Assemble the Po-Boy

    Slice the French bread rolls in half lengthwise. Spread tartar sauce on both sides of the bread. Layer with shredded lettuce, sliced tomatoes, and fried shrimp. Add sweet & sour pickles on top.
