Po-Boy Preparation

    Prepare the Catfish

    In a bowl, combine the cornmeal, flour, salt, and black pepper. Dip each catfish fillet into the beaten egg, then dredge in the cornmeal mixture until fully coated.

    Fry the Catfish

    In a large skillet, heat the oil over medium-high heat. Once the oil is hot, carefully place the coated catfish fillets into the skillet. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from oil and drain on paper towels.

    Assemble the Po-Boy

    Slice the French bread or po-boy roll lengthwise, without cutting all the way through. Spread tartar sauce inside the roll, then layer with shredded lettuce, sliced tomatoes, and sweet & sour pickles. Place the fried catfish fillet on top and close the sandwich.
