Fry the Catfish
In a large skillet, heat the oil over medium-high heat. Once the oil is hot, carefully place the coated catfish fillets into the skillet. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from oil and drain on paper towels.

Assemble the Po-Boy
Slice the French bread or po-boy roll lengthwise, without cutting all the way through. Spread tartar sauce inside the roll, then layer with shredded lettuce, sliced tomatoes, and sweet & sour pickles. Place the fried catfish fillet on top and close the sandwich.

Prepare Soup or Side
Choose your preferred soup (e.g., gumbo or clam chowder) and heat it according to package instructions, or make it from scratch. Alternatively, fry or bake the French fries as per package instructions until crispy.
