Preparation of Base

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion, green bell pepper, and celery. Sauté for about 5 minutes until the vegetables are soft.

    Add Garlic

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Cooking the Gumbo

    Brown the Meats

    Add the sliced Andouille sausage and cubed chicken breast to the pot. Cook until the meats are browned, about 5-7 minutes.

    Stir in Spices

    Add Cajun seasoning, bay leaves, salt, black pepper, and red pepper flakes. Mix well to coat the meat and vegetables.

    Add Liquids

    Pour in the chicken broth and diced tomatoes. Bring the mixture to a boil, then reduce the heat to low and let simmer for 30 minutes.

    Add Shrimp

    After 30 minutes, add the shrimp to the pot and cook for an additional 5 minutes until the shrimp are cooked through and pink.

Serving

    Garnish and Serve

    Remove bay leaves before serving. Ladle gumbo into bowls, garnish with fresh parsley and green onions. Serve hot.
