Method

Preparation

  1. 1

    Marinate the Chicken

In a medium bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade. Add the boneless chicken breasts to the bowl, ensuring they are well coated with the marinade. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, up to 2 hours for more flavor.

  2. 2

    Prepare the Onions

While the chicken is marinating, peel and slice the onions into thick rings or wedges. Set aside.

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 375-450°F or 190-232°C).

  2. 4

    Grill the Chicken

Remove the chicken from the marinade and place it on the preheated grill. Grill each side for about 6-7 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and has nice grill marks.

  3. 5

    Grill the Onions

While the chicken is grilling, place the onion slices directly on the grill or in a grill basket. Grill the onions for about 4-5 minutes on each side, until they are tender and have grill marks.

Serving

  1. 6

    Plate the Dish

Once both the chicken and onions are grilled, remove them from the grill. Let the chicken rest for 5 minutes before slicing. Serve the grilled chicken alongside the grilled onions. Optional: Garnish with chopped fresh parsley for added flavor and presentation.
