Roast the Garlic
Preheat the oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes or until soft and golden. Allow to cool, then squeeze out the roasted garlic cloves.

Prepare the Shrimp
Rinse the shrimp under cold water and pat dry with paper towels. Season with salt and black pepper.

Sauté the Mushrooms
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced cremini mushrooms and sauté for about 5-7 minutes until they are tender and browned. Remove them from the skillet and set aside.

Cook the Shrimp
In the same skillet, add the remaining tablespoon of olive oil and 2 tablespoons of butter. Once melted, add the seasoned shrimp. Cook for about 2-3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.

Make the Sauce
In the same skillet, add the white wine and bring to a simmer, scraping up any browned bits from the bottom of the pan. Add the roasted garlic by squeezing the cloves into the sauce and stir to combine. Allow the sauce to simmer for about 3-5 minutes until slightly reduced.
