Method

To Prepare Fried Shrimp

  1. 1

    Prepare the Shrimp

In a large bowl, rinse the shrimp under cold water and pat them dry with paper towels. Set aside.

  2. 2

    Make the Batter

In a separate bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Gradually add the cold water, whisking until the batter is smooth.

  3. 3

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 4

    Coat and Fry the Shrimp

Dip each shrimp into the batter, allowing excess to drip off. Carefully place the shrimp into the hot oil in batches. Fry for 2-3 minutes or until they turn golden brown and are cooked through. Remove with a slotted spoon and drain on paper towels.

To Prepare Tartar Sauce

    Combine Ingredients

In a medium bowl, combine the mayonnaise, chopped dill pickles, lemon juice, and Dijon mustard. Mix well.
