Starter: Garden Salad

    Prepare the vegetables

    Wash the mixed greens thoroughly and dry them. Cut the cherry tomatoes in half, slice the cucumber, and thinly slice the red onion.

    Assemble the salad

    In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.

    Make the dressing

    In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper until well combined.

    Serve the salad

    Pour the dressing over the salad just before serving and toss gently to coat.

Entrée: Grilled Lemon Herb Chicken

    Prepare the marinade

    In a bowl, mix together olive oil, lemon juice, minced garlic, chopped parsley, dried oregano, salt, and black pepper.

    Marinate the chicken

    Place the chicken breasts in a resealable bag or bowl and pour the marinade over them. Seal and refrigerate for at least 30 minutes.

    Preheat the grill

    Preheat your grill to medium-high heat.

    Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

Biscuits

    Cut the stick of unsalted butter into small pieces and mix it into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.

    Add milk

    Gradually add milk to the mixture and stir until just combined. Do not overmix.

    Shape the biscuits

    Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut into rounds with a biscuit cutter.

    Place the biscuits on a baking sheet and bake in the preheated oven for 12-15 minutes, or until golden brown.
