In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

Combine Wet Ingredients
In another bowl, whisk together the eggs, buttermilk, vanilla extract, and melted butter until smooth.

Mix the Batter
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Preheat your waffle maker according to the manufacturer's instructions. Pour the batter into the waffle maker and cook until golden brown. Repeat with the remaining batter.

Marinate the Chicken
In a large bowl, soak the chicken thighs in buttermilk for at least 2 hours, or overnight for best results.
