Method

Preparing the Fried Chicken

    Marinate the Chicken

    In a large bowl, combine the chicken thighs and buttermilk. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Prepare the Coating

    In a separate bowl, whisk together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

    Coat the Chicken

    Remove the chicken from the buttermilk and allow excess to drip off. Dredge each piece in the flour mixture, coating evenly. Place on a wire rack and let sit for about 15 minutes.

    Fry the Chicken

    In a large pot or deep skillet, heat vegetable oil to 350°F (175°C). Carefully add the chicken pieces, frying in batches if necessary. Cook for 8-10 minutes, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain.

Making the Waffles

    Combine Dry Ingredients

    In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.

    Mix Wet Ingredients

    In another bowl, whisk together the buttermilk, eggs, vanilla extract, and melted butter until well combined.

    Make the Waffle Batter

    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are fine.

    Cook the Waffles

    Preheat your waffle iron according to manufacturer’s instructions. Pour the batter onto the waffle iron and cook until golden brown and crispy, usually about 4-5 minutes.

Making the Garlic Butter

    Melt the Butter

    In a small saucepan over low heat, melt the unsalted butter. Add the minced garlic and cook for 1-2 minutes until fragrant.

    Remove from heat and stir in the chopped parsley.

Serving

    Place a waffle on each plate, top with a piece of fried chicken, drizzle with garlic butter, and maple syrup. Dust with powdered sugar before serving.
