Fried Catfish

    Rinse the catfish fillets under cold water and pat them dry with paper towels.

    In one bowl, whisk together the buttermilk and eggs. In another bowl, combine cornmeal, flour, salt, black pepper, and cayenne pepper.

    Dip each fillet into the buttermilk mixture, then dredge in the cornmeal mixture until well coated.

    In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).
