Method

Fish Preparation

  1. 1

    Marinate the Catfish

In a shallow dish, combine the catfish fillets with lemon juice, salt, and black pepper. Make sure the fish is well coated. Cover and let it marinate in the refrigerator for at least 30 minutes.

Batter

  1. 2

    Prepare the Batter

In a large bowl, mix together the cornmeal, all-purpose flour, paprika, cayenne pepper, and garlic powder. In another bowl, whisk together the eggs and milk until well combined. Gradually add the egg mixture to the dry ingredients, stirring until a thick batter forms.

Frying

  1. 3

    Heat the Oil

In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles, it's ready.

  2. 4

    Fry the Catfish Strips

Remove the marinated catfish from the refrigerator. Cut the fillets into strips about 1 inch wide. Dip each strip into the batter, allowing excess to drip off. Carefully place the battered strips into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to transfer the strips to a paper towel-lined plate to drain excess oil.

Serving

  1. 5

    Serve Hot

Serve the fried catfish strips hot with a side of tartar sauce and lemon wedges for squeezing over the fish.
