Crust

Method

Crust

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and sugar. Melt the unsalted butter in the microwave or on the stove, then mix it with the graham cracker mixture until fully combined.

  2. 2

    Form the crust

Press the mixture into the bottom of a 9-inch springform pan evenly. Bake in the preheated oven for about 8-10 minutes or until lightly golden. Remove from the oven and let it cool completely.

Filling

  1. 3

    Prepare the filling

In a large mixing bowl, beat the cream cheese until smooth using an electric mixer. Gradually add in the granulated sugar, sour cream, and vanilla extract. Mix until combined.

  2. 4

    Add the eggs

Add the eggs one at a time, mixing well after each addition until the mixture is smooth and creamy.

  3. 5

    Bake the cheesecake

Pour the filling into the cooled crust and spread it evenly. Bake in the oven at 325°F (160°C) for about 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool inside for about an hour.

  4. 6

    Cool the cheesecake

After the cheesecake has cooled, remove it from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, or preferably overnight.

Topping

  1. 7

    Prepare the strawberry topping

Wash and slice the fresh strawberries. In a bowl, combine the sliced strawberries with granulated sugar and lemon juice. Toss gently to coat the strawberries and let them sit for about 15-20 minutes to release their juices.

  2. 8

    Assemble the cheesecake

Once the cheesecake is chilled, remove it from the springform pan. Arrange the macerated strawberries on top of the cheesecake before serving.
