    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thick strips, about 1/4 to 1/2 inch wide, to create the fries.

Soaking

    Soak the Cut Fries

    Place the cut potato strips in a large bowl of cold water. Let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

Drying

    Dry the Potatoes

    After soaking, drain the water and lay the fries out on a clean kitchen towel or paper towels. Pat them dry to remove excess moisture.

Frying

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, pour in the vegetable oil and heat it to 350°F (175°C). Use a thermometer to check the temperature.

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in small batches. Fry for about 5-7 minutes or until they are golden brown and crispy. Avoid overcrowding the pot.

    Once cooked, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil.

    While the fries are still hot, sprinkle them with salt, black pepper, and garlic powder to taste. Toss them gently to ensure even coating.
