Preparation

    Cook the Potatoes

    In a medium pot, boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and mash lightly.

    Prepare the Filling

    In a large bowl, combine the shredded chicken, mashed potatoes, chopped cilantro, and blended cheese. Mix until well combined. Season with salt and pepper to taste.

    Make Taco Sour Cream

    In a small bowl, mix together the sour cream and taco seasoning until well blended. Set aside.

Assembling and Frying Flautas

    Prepare the Tortillas

    Heat the white corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

    Fill the Tortillas

    Place about 2-3 tablespoons of the chicken filling on one side of each tortilla. Roll the tortilla tightly around the filling, securing it closed.

    Fry the Flautas

    In a large skillet, heat about 1 inch of oil over medium-high heat. Once hot, carefully place the rolled flautas seam-side down in the oil. Fry for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
