Starter: Garden Salad

    Prepare the Vegetables

    Wash and dry the mixed greens. Halve the cherry tomatoes. Peel and slice the cucumber into thin rounds. Slice the red onion into thin rings.

    Make the Dressing

    In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper until well combined.

    Assemble the Salad

    In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion. Drizzle the dressing over the salad and toss gently to combine.

Entrée: Herb Roasted Chicken

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Chicken

    Rinse the whole chicken under cold water and pat dry with paper towels. Place the chicken in a roasting pan.

    Season the Chicken

    In a small bowl, mix together minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper. Rub this mixture all over the chicken, including under the skin.

    Roast the Chicken

    Place the chicken in the preheated oven and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with its juices halfway through cooking.

    Rest and Serve

    Remove the chicken from the oven and let it rest for 10 minutes before carving. Serve with your prepared garden salad.

Biscuits

    Preheat the Oven

    Preheat your oven to 450°F (230°C).

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, and salt.

    Cut in the Butter

    Add the unsalted butter to the flour mixture and use a pastry cutter or your fingers to work it into the flour until it resembles coarse crumbs.

    Add Milk and Form Dough

    Pour in the milk and stir until just combined. Do not overmix. Turn the dough out onto a floured surface and knead gently a few times.

    Shape and Bake

    Pat the dough into a 1-inch thick round and cut out biscuits using a biscuit cutter or a glass. Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.
