Method

Crust Preparation

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.

  2. 2

    Form the crust

Press the mixture firmly into the bottom of a 9-inch springform pan, ensuring it is evenly spread out. Bake in the preheated oven for 8-10 minutes until set. Remove from the oven and let cool.

Cheesecake Filling Preparation

  1. 3

    Mix the filling

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and sour cream, mixing well after each addition. Stir in the vanilla extract and dulce de leche until fully combined.

  2. 4

    Add eggs

Add the eggs one at a time, mixing on low speed until just combined. Make sure not to overmix.

  3. 5

    Bake the cheesecake

Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for an hour.

  4. 6

    Chill the cheesecake

Remove the cheesecake from the oven and let it cool to room temperature. Then, refrigerate for at least 4 hours or overnight to set completely.

Praline Topping Preparation

  1. 7

    Make the praline topping

In a saucepan, combine the chopped pecans, brown sugar, butter, and heavy cream. Cook over medium heat, stirring constantly until the mixture comes to a boil.

  2. 8

    Simmer and cool

Let it boil for 2-3 minutes until slightly thickened. Remove from heat and let cool to room temperature.

Assembly and Serving

  1. 9

    Top the cheesecake

Once the cheesecake is fully chilled, pour the cooled praline topping over the top, spreading it evenly.

  2. 10

    Serve

Slice the cheesecake and serve chilled, enjoying the rich flavors of dulce de leche and crunchy praline.
