Cooking the Gumbo

Brown the Duck Legs
In a large pot, heat the vegetable oil over medium-high heat. Season the duck legs with salt and black pepper. Add them to the pot and brown on all sides, about 8-10 minutes. Remove the duck and set aside.

Stir in the sliced Andouille sausage and cook for another 2-3 minutes.
