Mini Cheesecakes

Method

Mini Cheesecakes

  1. 1

    Prepare the crust

Preheat your oven to 325°F (160°C). In a bowl, mix the graham cracker crumbs, melted butter, and a pinch of salt until combined. Press this mixture into the bottom of a muffin tin lined with cupcake liners.

  2. 2

    Make the cheesecake filling

In a large bowl, beat the cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue mixing until well combined. Add in the vanilla extract and eggs, one at a time, mixing well after each addition.

  3. 3

    Assemble and bake

Pour the cheesecake filling over the prepared crusts in the muffin tin. Bake for 20-25 minutes or until the centers are set. Allow them to cool before refrigerating for at least 2 hours.

Chocolate Chip Cookies

  1. 4

    Prepare the dough

Preheat your oven to 350°F (175°C). In a bowl, whisk together the flour, baking soda, and salt. In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

  2. 5

    Combine ingredients

Gradually add the flour mixture to the butter mixture, stirring until just combined. Fold in the chocolate chips.

  3. 6

    Bake the cookies

Drop spoonfuls of dough onto a baking sheet lined with parchment paper. Bake for 10-12 minutes or until the edges are golden brown. Allow cooling on a wire rack.

Fruit Tart

  1. 7

    Prepare the tart

Pre-bake the pastry crust according to package instructions until golden and crisp. Let it cool.

  2. 8

    Fill with pastry cream

Spread the pastry cream evenly over the cooled pastry crust.

  3. 9

    Top with fruits

Arrange the mixed fresh fruits over the pastry cream. Warm the apricot jam in a microwave or on the stove and brush it over the fruits for a shiny finish.
