1. Boil Water

Bring a large pot of salted water to a boil.

2. Cook Pasta

Add the fettuccine to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

3. Drain Pasta

Once cooked, drain the pasta and set aside, reserving a cup of pasta water.

Crawfish Sauce Preparation

4. Heat Oil

In a large skillet, heat the olive oil over medium heat.

5. Sauté Vegetables

Add minced garlic, diced green bell pepper, diced onion, and diced celery to the skillet. Sauté for about 5 minutes until the vegetables are soft.

6. Add Crawfish

Stir in the crawfish tails and Cajun seasoning. Cook for an additional 3-4 minutes until the crawfish are heated through.

7. Make Sauce

Pour in the heavy cream and simmer for about 5 minutes, stirring occasionally, until the sauce thickens slightly.

8. Add Cheese

Add the Parmesan cheese and black pepper to the sauce, stirring until the cheese is melted and well-combined.

9. Adjust Sauce Consistency

If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

10. Combine Pasta and Sauce

Finally, toss the cooked fettuccine with the sauce until the pasta is well-coated.

11. Garnish

Garnish with fresh parsley before serving.
