    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and bell pepper. Sauté for about 5 minutes until the vegetables are softened.

    Add Garlic

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Cooking the Bisque

    Combine Ingredients

    Add the crawfish tails, corn kernels, chicken or vegetable broth, bay leaves, and Cajun seasoning to the pot. Stir well to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Let it simmer for about 20 minutes, allowing the flavors to meld.

    Add Cream

    Remove the bay leaves, then stir in the heavy cream. Allow the bisque to heat through for another 5 minutes.

Serving

    Garnish and Serve

    Serve the bisque hot, garnished with chopped green onions. Enjoy!
