Preparing Oysters

Marinate the Oysters
In a bowl, combine the lemon juice, hot sauce, garlic powder, and salt. Add the gulf oysters and stir gently to coat. Let them marinate for 30 minutes in the refrigerator.

Make Tartar Sauce
In a small bowl, mix together the mayonnaise, chopped pickles, chopped capers, and lemon juice. Season with salt and black pepper to taste. Refrigerate until ready to serve.
Breading and Cooking Oysters

Prepare the Breading
In a shallow bowl, combine the cornmeal, all-purpose flour, black pepper, and paprika. In another bowl, whisk together the eggs and milk until smooth.

Coat the Oysters
Remove the marinated oysters from the refrigerator. Dip each oyster first into the egg mixture, then dredge them in the cornmeal mixture, ensuring they are well coated.

Fry the Oysters
In a large skillet, heat oil over medium-high heat. Once hot, carefully add the breaded oysters in batches. Fry them for 2-3 minutes on each side until golden brown. Remove and drain on paper towels.
