Soup Base

Method

Preparation of Soup Base

  1. 1

    Sauté Vegetables

In a large pot, melt the butter over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.

  2. 2

    Add Garlic and Corn

Stir in the minced garlic and corn kernels. Cook for an additional 2-3 minutes, stirring occasionally.

  3. 3

    Add Broth and Seasonings

Pour in the chicken or vegetable broth, and add the bay leaf, salt, black pepper, and cayenne pepper. Bring the mixture to a simmer, cover, and cook for about 15 minutes.

Finalizing the Bisque

  1. 4

    Blend the Soup

After 15 minutes, remove the bay leaf. Use an immersion blender to purée the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and leave the rest as is.

  2. 5

    Add Crab and Cream

Stir in the fresh lump crab meat and heavy cream. Allow the bisque to heat through for another 5 minutes on low heat, stirring gently.

  3. 6

    Garnish and Serve

Taste the bisque and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
