    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a food processor, crush 24 Oreo cookies until they are fine crumbs. Melt 5 tablespoons of butter and mix it with the cookie crumbs until fully combined. Press the mixture into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes, then remove from the oven and set aside to cool.

    Make the Filling

    In a large mixing bowl, use an electric mixer to beat 16 oz of cream cheese until smooth. Gradually add in 1 cup of granulated sugar and continue to beat until well combined. Mix in 1 cup of sour cream and 1 teaspoon of vanilla extract until incorporated. Add 3 eggs, one at a time, mixing on low speed after each addition until just blended. Finally, fold in 8 crushed Oreo cookies.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula and bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional 1 hour. Remove from the oven and let it cool to room temperature.

    Add Topping

    Once the cheesecake is completely cooled, spread 1 cup of whipped cream over the top. Crush 4 Oreo cookies and sprinkle them on top of the whipped cream as a garnish. Refrigerate the cheesecake for at least 4 hours or overnight before serving.
