Preparing the Filet

    Season the Filet

    Take the Certified Angus Beef® filet and season both sides generously with salt and black pepper.

    Heat the Pan

    In a heavy skillet or cast iron pan, heat the olive oil over medium-high heat until shimmering.

    Sear the Filet

    Place the seasoned filet into the hot pan and sear for about 4-5 minutes on one side, until a nice crust forms.

    Flip and Add Flavor

    Flip the filet over and add the butter, fresh thyme, and crushed garlic cloves to the pan. Cook for an additional 4-5 minutes for medium-rare, basting the filet with the melted butter.

    Rest the Filet

    Remove the filet from the pan and let it rest for 5 minutes before serving.

Preparing the Side Dish

    Wash the asparagus and trim the tough ends.

    In a bowl, toss the asparagus with olive oil, salt, and black pepper.
